You can only do that in a plane that has a positive power/thrust to weight ratio. So in broad terms yes it is possible to turn an aircraft's nose to the sky and hover with proper throttle adjustment but as far as i know nothing in war thunder would be capable of doing that, they don't have enough power and are not light enough to achieve that perfect balance.

Exactly. Some of the trick Sport Planes are really light, and have powerful engines. And this is a large sized RC Model of one.
