Currently using an Acer P241W 24" as the center monitor. I have two 22" LG monitors as the left and right for an 'Eyefinity' setup - I'm lazy and haven't bothered to get the DisplayPort cable to get the third one going.

Honestly it depends on the game. For frame rate, you need to take into account the game, the CPU and the GPU. My 980Ti helps to keep me above 60 on most games (I do limit max FPS on some games just because) and I have been known to drop down to about 45 FPS when in something like AV in WoW, due to all of the AOE particles and me playing on ultra.
What about planetside 2?

Haven't played it. I know in Overwatch, I keep up a steady 60+ with no issue.
